5April2015 Easter dinner

Cooking dinner together and getting ready to eat – normal Easter dinner. Doug came over for some ham, potatoes, salad with candied pecans and blue cheese, roasted asparagus and broccoli with bacon and garlic, which John adored for some reason 🙂

We did try a new method of candying the pecans. I simmered them in some sugar syrup (2 cups water, 2 cups sugar) and then let them soak until I was ready to sprinkle with dried herbs (oregano, thyme and savory), salt and some chipotle powder. I tried both oven roasting at 300 degrees and pan frying in some Earth Balance butter, and we all decided the oven roasting was better. You just need to remove them before they are completely hard or they are too crunchy. I personally love them that way! 

Oh, and that big black thing Luke and Jack are playing with? John brought home a video console that work brought for entertainment. It is a replica of the tables we used in the 80s to play the old video games. They keep playing Space Invaders for some reason… too funny.
